Waldorf salad - Y2

Y2 students were encouraged to choose which herbs they liked to chop and add to their salad. They learned that the famous Waldorf salad consisted of mixing sweet and sour flavours and cutting different shapes with the apple matchsticks in julienne style. Their final cooking recipe of the year went the usual way: enjoying a fun and informative class.

INGREDIENTS
½ bunch celery
1 apple
30g White raisins
30g grapes and/or black raisins
2 tablespoons mayonnaise
2 tbsp dairy cream
½ lemon or lime juice
Herbs: mints, chives, cilantro or parsley.
 
METHOD:
Cut the apples in matchstick shapes, julienne style, chop the celery and the herbs, and mix the raisins with the mayonnaise and dairy cream. Squeeze some lime juice on top and serve cold on lettuce.
