Tzastiki Year4 - Cucumber dip


Y4 students enjoyed squeezing out the water from the cucumbers after they practiced peeling and grating them. This typical Greek salad had the perfectly light and simple flavour for them to enjoy on a summer day in the company of their friends.

Ingredients:
2 cucumbers
1 ½ cups of Greek yoghurt
1 tablespoon of wine vinegar
1 or 2 cloves of garlic
½ teaspoon of salt
1 teaspoon of dill
4 tablespoons of olive oil
Pieces of Pita Bread to spread on.

Method
Peel the cucumbers and grate with an adequate grater. Remember to keep your fingers safe. Add salt and leave the cucumber for 5 to 10 minutes. Then remove the excess liquid that will come out with a cheese cloth (Perfex cloth type). Peel and crush the garlic. Add the yoghurt, the vinegar and the olive oil and garnish with the dill. Mix all and serve cold with pita bread.
