Potato and Olive Salad


Y4 had lots of fun pitting olives, peeling and cutting potatoes and peeling eggs. For those with allergies we replaced eggs with hearts of palm and they all showed they were experts at squeezing limes and lemons and chopping herbs for some extra flavor, which surprised them how much they enjoyed their creations.

INGREDIENTS:
1 boiled potato
1 boiled egg
3 black olives, pitted
A bunch of chives
Salt and a few drops of lemon juice
150g hearts of palm
OTHER HERBS: mint, oregano, rosemary, basil.

METHOD: 
Boil the potatoes until soft. Boil the eggs for 1 minute and leave them in water for 10 minutes in a covered pan for perfect hard-boiled eggs. Let potatoes and eggs cool to peel them. Cut in small cubes, and mix in a bowl. Cut hearts of palm in desired shapes. Add a few drops of lemon juice, salt and pitted olives. Add some chopped chives and other herbs of choice.
