Peanut butter granola bars –Y4


After a fun activity in which Y4 students associated the names of a rich variety of ingredients that we would use, they got busy chopping them to make their own granola bars. We reinforced notions of no sharing to start the semester, and they added a portion of peanut butter and jam (jelly). They were surprised at how their dried fruits, nuts and cereals all combined into squares of healthy snack bars that they could even take home to show.

INGREDIENTS
1½ cups rolled oats 
1 cup dates, pitted and pureed
 ½ cup almonds, chopped
½ cup walnuts and roasted peanuts
½ cup cashew nuts
½ cup sunflower and pumpkin seeds
½ cup dried apricots
1/3 cup raisins- yellow and black

METHOD
Chop all ingredients in a bowl and line a baking tray with parchment paper. Prepare caramel with peanut butter and spread over the ingredients. Form squares for nut bars.
For sticky syrup: ¼ cup butter; ¼ cup honey; ½ cup brown sugar; ½ teaspoon salt; ½ teaspoon vanilla extract. Add peanut butter. Put all together in bowl and place in microwave and melt. Optionally, melt in cooking pan.
