Nut bars - Y1

Y1 students started the semester with a fun activity to introduce the ingredients used in this delicious granola bar that they could even take home, if they resisted eating it first. With baking paper, they rolled their individual portions of a rich variety of oats, seeds and cereals and combined them into squares, sticking it all together with a novelty paste of dates and raisins. Adding peanut butter and jam (jelly) was an optional further use of nuts.

INGREDIENTS
1½ cups rolled oats 
1 cup dates, pitted and pureed
 ½ cup almonds, chopped
½ cup walnuts and roasted peanuts
½ cup cashew nuts
 ¼ cup unsweetened shredded coconut
1/3 cup raisins- yellow and black
1/3 cup sunflower seeds

METHOD   
                                                                                                                                                         
Chop all ingredients in a bowl and line a baking tray with parchment paper. Prepare caramel with peanut butter and cover the ingredients. Form squares for nut bars.     For sticky syrup: ¼ cup butter; ¼ cup honey; ½ cup brown sugar; ½ teaspoon salt; ½ teaspoon vanilla extract. Put all together in bowl and place in microwave and melt. Optionally, melt in cooking pan. Add peanut butter and Jam (jelly) if wished.
