Fruit bars – y2, y3


Y2 and Y3 started the semester with reinforced notions of no sharing and a power point presentation to introduce the rich variety of ingredients that they would use in this healthy snack. Their oats, seeds and cereals all combined into squares of delicious granola bars with the help of exotic dried fruit such as coconut, dates and apricots.
 
INGREDIENTS
1½ cups rolled oats 
1 cup dates, pitted and pureed
¼ cup unsweetened coconut flakes
1/3 cup raisins- yellow and black
½ cup sunflower and pumpkin seeds
½ cup dried apricots
½ cup cornflakes

METHOD
Chop all ingredients in a bowl and line a baking tray with parchment paper. Prepare caramel, and cover the ingredients. Form squares for fruit bars. Place in fridge for 2 hours.
For sticky syrup:
¼ cup butter; ¼ cup honey; ½ cup brown sugar; ½ teaspoon salt; ½ teaspoon vanilla extract. Put all together in bowl and place in microwave and melt. Optionally, melt in cooking pan.
