Zoodles with pesto- y2


Y2 Students reviewed important rules about non-sharing, hygiene and distancing in their first Dual Day experience and the cooking class was a success with this healthy recipe. They had a chance to compare different types of tools to make the zucchini noodles (zoodles) and then they added the basil to the olive oil in the food processor to make the pesto sauce, which they could try with their zucchini noodles if they preferred it to the tomato sauce. They all had fun observing the different shapes that came out of each type of grater and they loved seeing the noodle shapes exiting the spiralizer. They also enjoyed eating outdoors to keep social distance when necessary.

INGREDIENTS
1 spoon olive oil
I zucchini
Optional: grated cheese for topping.
For pesto sauce:
3 spoons olive oil
3 tbspoons grated cheese
1 bunch basil leaves

Method:
To prepare zucchini noodles (zoodles), grate with spiralizer or other grater of choice. Place in frying pan with 1 spoon of olive oil and leave to cook for about 3 to 5 minutes, until soft. 
For pesto sauce: Place basil leaves in food processor with olive oil, grated cheese and some water and blend (add some zucchini to make your sauce taste milder).
If you prefer you can use tomato sauce and grated cheese instead of pesto.
