STUFFED TOMATOES

INGREDIENTS

6 medium tomatoes
1tbsp butter
2 tbsp chopped onion
½ tbsp salt
8 tbsp ricotta cheese
5 tbsp cream
Basil leaves
3 tbsp shredded carrots
Parmesan cheese (just to sprinkle)

PROCEDURES

1. Wash tomatoes and cut a thin slice from each stem; cut in half.
2. Scoop out seeds from tomatoes.
3. Melt butter in small saucepan; add onions and cook until soft. Remove from heat.
4. Combine ricotta, onions, salt, cream and basil.
5. Sprinkle insides of tomatoes with salt; fill tomatoes with mixture.
6. Sprinkle parmesan cheese.
7. Place tomatoes in greased baking dish. Cook for 12-15 minutes, until tomatoes begin to soften.
