GINGERBREAD SQUARES

INGREDIENTS

90 g butter or margarine
¼ cup packed brown sugar
5 tbsp molasses
1 egg white
1 tsp vanilla extract
1 ¼ cups all-purpose flour
¼ tsp baking soda
¼ tsp baking powder
½ tsp ground ginger
125 g apples, cooked and finely chopped

PROCEDURES

1. Preheat oven to 180ºC. Grease a medium baking sheet and line it with parchment paper.
2. Put butter, sugar, molasses, egg white and vanilla extract into a blender and blend until smooth.
3. In a separate bowl, sift flour, baking soda, baking powder, salt and ginger together. Add to the creamed mixture and beat together thoroughly.
4. Stir in chopped apples. Pour mixture onto prepared baking sheet.
5. Bake for 10 minutes, or until golden brown.
6. Remove from the oven and cut into 24 pieces.
7. Transfer squares to a plate and let them cool completely before serving.
