CREAMY PEANUT GINGER DIP

This Asian-influenced dip has a familiar peanut butter flavor for kids but packs a ginger punch that the adults will appreciate.

INGREDIENTS

½ cup creamy peanut butter
2 tbsp soy sauce
3 tbsp vinegar
1 tbsp cube peeled ginger
2 tbsp chopped parsley
2 tbsp hot water

PROCEDURES

1. Combine all ingredients, except the water.
2. Pulse in the blender until smooth, about 20 seconds, while gradually adding hot water.
3. Stir with a spatula to make sure all ingredients are mixed well (the soy sauce and vinegar can settle on the bottom).
4. Serve with broccoli, carrots or chicken nuggets.
