BANANA CAKE WITH PEEL

INGREDIENTS

2 banana peels
2 eggs
1 ¼ cup sugar
1 ½ cup all-purpose flour
¼ cup water
2 ½ tbsp margarine
1 tbsp baking powder

FILLING

2 bananas
1 tbsp lime juice
¼ cup water
1 cup sugar

PROCEDURES

  1. Blend banana peels and water very well. Set aside.
  2. Preheat the oven to 180°C.
  3. Beat egg yolks, sugar and margarine in a bowl until pale.
  4. Whisk egg whites in another bowl until stiff, then fold into yolk mixture.
  5. Add banana mixture and baking powder.
  6. Pour into greased baking sheet.
  7. Bake for 18 minutes. Meanwhile prepare banana filling.

 

FILLING

  1. Slice bananas.
  2. Melt sugar until light golden. Add water and gently mix until caramel melts.
  3. Add bananas and lime juice. Let it cook for 2 minutes.
  4. .Serve on top of banana cake. Enjoy it!!
